Ingredients

  • 1 stick butter-melted
  • 2 ½ cup chocolate cookie crumbs
  • 1 can sweetened condensed milk
  • 1 cup shredded coconut
  • 1 cup chocolate chips
  • ¾  cup chopped macadamia nuts

 

Directions

Preheat the oven to 350. Combine melted butter and cookie crumbs. Press into a greases 9×13 pan. Combine coconut, chocolate chips and nuts and spread over crust. Drizzle sweetened condensed milk over entire pan. Bake for 20-25 minutes or until edges are bubbly and lightly browned. Serve and enjoy!

Pumpkin Bread

Pumpkin Bread Recipe

There’s no question pumpkin is a popular flavor that shows up in many recipes this time of year. You can find pumpkin in deserts, appetizers, specialty coffees and even main dishes.

One simple way you can enjoy both the taste and spicy aroma of this fall favorite is by making a loaf of some delicious pumpkin bread. This bread recipe is ready in a little over an hour but the aroma of it baking will fill your home for hours more.

Pumpkin Bread RecipeIngredients

  • 3 cups sugar
  • 1 cup oil
  • 4 eggs
  • 1 – 15 oz. can pumpkin (or fresh pumpkin puree)
  • 3 ½ cup flour
  • 1 tsp. each: baking soda, salt, cinnamon and nutmeg
  • ½ tsp. each: baking powder, clove and all spice
  • ½ cup water

 

Directions:

Preheat oven to 350. Combine sugar, eggs and oil in mixing bowl and mix until pale yellow and very well combined. Add pumpkin and mix well. Combine dry ingredients and add to the pumpkin mixture alternating with the water, beating well after each addition. Pour into 2 well greased loaf pans and bake for 60-65 minutes or until a toothpick comes out clean. Cool on a rack, slice and serve. Makes two loaves.

Duck Wild Rice Soup

Duck Wild Rice Soup RecipeThis is a great weekday meal that is hearty and quick to satisfy your busy family within an hour. Adding the extra ingredients to the soup mix really makes it your own recipe with a homemade taste.

Ingredients

  • Duck Wild Rice Soup Recipe1 box Frontier Wild Rice Soup Mix (found in your local Scheels) and ingredients indicated on box
  • ½-1lb cooked and cut up duck
  • 1 can sliced mushrooms
  • 10-15 strips bacon, cooked and crumbled
  • 1 eight oz. jar Cheez Wiz®
  • Sliced green onion for garnish (optional)

Directions

Prepare soup according to the box recipe. With 5 minutes left of cooking, add remaining ingredients, except the green onion and a little bacon for garnish. Top with onion and bacon.

Serve with toasted bread or crackers for dipping.

Buffalo Pheasant Tacos

Buffalo Pheasant Taco RecipeAdd some heat to your upland trophy this season with the Buffalo Pheasant Tacos. This recipe works great with any wild game bird and was recently featured in the Scheels upland preprint.

Ingredients

Buffalo Pheasant Taco Recipe

  • 1-1.5 lbs. pheasant breasts, cut into bite-size pieces
  • 1 pkg. Chicken Fry Mix (we like Cajun Injector Brand)
  • ⅓-½ cup buffalo wing sauce
  • 2 Tbs. butter
  • 10-12 6-inch tortillas
  • shredded cheddar cheese
  • chopped green onions
  • diced celery
  • crumbled blue cheese
  • ranch or bleu cheese dressing
  • crumbled bacon
  • diced avocado
Directions
Cajun Injector Seasoned Coating Mix

Prepare and fry pheasant according to package. Once the chicken is done, set it aside in a bowl and toss with the buffalo wing sauce and melted butter. To assemble tacos, fill tortillas with fried pheasant pieces and all your favorite toppings.

Tips for frying
  • Make sure the pheasant is cold, this ensures sealing in the moisture
  • Don’t overcrowd the pot and if doing multiple batches, let the oil temp recover to the correct temperature
  • Have a plate with paper towels ready before frying to absorb any extra oil

Monster Cookies

Recipe for monster cookies from Scheels Gramma Ginna's Deli and Fudge Shop. A cookie made for a monster-sized sweet craving! This is a customer favorite served daily in select Scheels Gramma Ginna’s Deli and Fudge Shops.

  • 1/2 lb butter, softened
  • 2 cups sugar
  • 2 cups brown sugar
  • 6 eggs
  • 2 tsp vanilla
  • 2 tsp corn syrup
  • 3 cups peanut butter
  • 4 tsp baking soda
  • 9 cups oats
  • 2 cups chocolate chips
  • 2 cups M&M’s
Directions

Preheat oven to 350. Cream butter and sugars. Add eggs, vanilla and corn syrup until well combined. Beat in peanut butter. Add oats and baking soda. Mix well. Gently fold in chocolate chips and M&M’s.

Scoop out onto a sprayed or parchment lined cookie sheet and slightly flatten the cookies. Bake 12-14 minutes or just until the edges are golden brown. Do not over bake – these cookies are best a little chewy.

Serves up to 36 depending on size of cookies.

Note: Any cookies that contain oatmeal bake more evenly if flattened a little. The best way is to just use your hand and press them down.

1lb rotini pasta, cooked and cooled
3 ribs of celery, diced
½ red onion, diced
1½ cup cherry tomato, cut in half
15 slices pre-cooked bacon, cut into pieces

Dressing
2 cups Miracle Whip
3 Tbs. sugar
2 tsp. white vingar
1 Tbs. dried parsley
1 Tbs. onion powder
Salt and pepper to taste

Directions

Combine dressing ingredients in a bowl. Add in the rest of the ingredients and mix well. You’re done! Serve as a delicious side dish or bring to your next potluck event.
